Mexican Loteria Happy Hour - Cardia Puebla Cooking

Fees: $25 per Zoom Window* for 1 session. If you are unable to attend, you will receive the recipe and instructions and can contact Carlos and Lety for any assistance.

Join hosts Carlos & Lety of Cardia Puebla Cooking in Mexico and friends for a Zoom Happy Hour. We’ll learn to mix a new cocktail, cook a tasty appetizer, and enjoy a friendly game of Loteria.

Ingredients & Setup
Please purchase ingredients, gather kitchen utensils, setup a computer/iPad/phone in your kitchen, and be ready for a couple of happy hours!
Refreshing Pineapple Cocktail (2 servings)
Ingredients
- 2 Shots of Tequila or Mezcal
- 1 cup fresh pineapple cut into small cubes
- 1 cup pineapple juice
- 1⁄2 cup of mango cut into small cubes
- 1lime
- 1 teaspoon of sugar
- 1 tablespoon Tajin chili powder
- Ice to taste
Preparation
- Frost a glass with the lime juice and the Tajin chili, add ice to taste.
- Blend the pineapple, the pineapple juice, the mango, the juice of 1⁄2 lime, the sugar and the tequila or mezcal.
- Add to the glass and enjoy.

Alambre de Pollo (2 servings)
Ingredients
- 350 grams of chicken breast strips (fajitas)
- 1 green bell pepper
- 1 yellow bell pepper
- 1 orange bell pepper
- 200 grams of sausage
- 150 grams of bacon
- 1 medium onion
- 250 grams of grated Manchego cheese
- 1⁄2 teaspoon of salt
- 1⁄4 teaspoon ground black pepper
- 6 flour tortillas
Preparation
- Cut the bacon into small pieces and reserve.
- Fry the chorizo together with the bacon until golden brown and set aside.
- Cut the bell peppers into 1-inch cubes and set aside.
- Cut 1⁄2 onion into 1-inch cubes and set aside.
- Fry the chicken breast strips in the same pan where the chorizo was fried and season with salt and pepper.
- When the chicken strips are sealed add the onion and peppers, let cook covered for 20 minutes with medium flame.
- When everything is cooked, add the grated Manchego cheese and cover so that it gratins with the flame off.
- Heat the flour tortillas and serve the wire with them and a little sauce.
Raw Green Sauce
Ingredients
- 400 grams of tomatillo
- 2 green serrano peppers
- 1⁄4 medium onion
- 1 clove garlic
- 4 sprigs of coriander
- 1⁄2 teaspoon of salt
- 1⁄4 teaspoon ground black pepper
- 1 medium avocado
Preparation
- Blend the tomatillos, chiles, onion, garlic, cilantro, salt and pepper with a little water.
- Cut the avocado into small cubes and add to the above mixing perfectly.
